This is one nutritous omelet recipe that will provide your body with a whole bunch of healthy nutrients and keep you full for a very long time.You can prefer with egg whites or with yolk as well - both tastes awesome.
Ingredients(1 Servings)
1 tsp olive oil
4 egg whites with 2 whole egg or 1 whole egg and 6 egg whites.
1 small (150g) cooked chicken breast, shredded
1 Golden Delicious apple, cored, peeled and diced
3-4 large spinach leaves, stems removed, finely chopped
20g hazelnuts, lightly toasted and crushed
Pinch salt and pepper
Directions
Add oil to a non-stick fry pan and heat over medium heat.
Add the pieces of chicken, sprinkle with salt and pepper and cook until nice and golden brown ;
Add apples and cook until softened, about 30 seconds. Transfer to a small plate and reserve;
Add collards and cook until wilted, about 30-45 seconds. Add reserved chicken and apples back into the pan.
Pour in the egg whites and sprinkle chopped hazelnuts overtop.
Reduce heat, cover loosely and cook for about 5 minutes, until the omelette is completely set and opaque throughout.
Delicately slide omelet onto serving plate and serve immediately with bread toast.
