6 whole chicken wings, separated into thighs and wings
6 large cloves garlic, peeled and finely diced
1/2 cup hot water
1/2 cup fish sauce
1/2 cup sugar
3 tablespoons oil, for frying
Directions
Preheat oven to 200 degrees C.
Place the diced garlic in a small bowl and add the hot water. Let sit 5 minutes then strain the garlic through a tea strainer. Keep the garlic and reserve the water.
To the garlic water, add the fish sauce and sugar and stir until sugar is dissolved.
Place the chicken wings on a rack on a baking tray. Bake 30 minutes until browning, turning once or twice. Turn heat down to 170 degrees C and bake 20 minutes more or until done to your liking.
Meanwhile, heat oil in a small saucepan over medium low heat. Add reserved garlic and fry gently until just brown. Drain on kitchen paper towels.
To finish wings, heat fish sauce mixture in a frypan until bubbling and thickening slightly. Add cooked wings and fry until well glazed. Add fried garlic and toss well. Serve!
