Ingredients
(2 - 3 Servings)
4 slices of whole wheat or white bread
2 boiled eggs
2 tbsp mayonnaise (light or regular)
1 tsp mustard sauce (optional)
1 tbsp finely chopped onions (optional)
1 tbsp finely chopped fresh parsley/coriander
Salt & black pepper to taste
A pinch of chili flakes (optional)
Butter (optional, for toasting bread)
Directions
Boil the eggs
– Place eggs in boiling water for about 10 minutes until hard-boiled. Let them cool, peel, and chop finely.
Make the filling
– In a bowl, add chopped eggs, mayonnaise, mustard, onions, parsley, salt, and pepper. Mix well until creamy.
Assemble the sandwich
– Spread the egg mayo mixture evenly on one bread slice and cover with another slice.
Toast (optional)
– You can lightly butter the bread and toast it on a pan/grill until golden brown for extra flavor.
Serve
– Cut into halves or triangles and serve with ketchup or a light salad.
