For Marinade:
1.5 pounds (about 700g) boneless, skinless chicken breasts, sliced into thin strips
3 tablespoons olive oil
3 tablespoons lime juice
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
For Fajitas:
2 tablespoons olive oil
1 large onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
Flour tortillas
Optional toppings: sour cream, salsa, guacamole, shredded cheese, chopped cilantro, lime wedges
Directions
1. Marinate the Chicken:
In a bowl, whisk together the olive oil, lime juice, cumin, chili powder, garlic powder, onion powder, smoked paprika, salt, and black pepper.
Add the sliced chicken to the marinade, ensuring each piece is well coated. Marinate for at least 30 minutes to allow the flavors to infuse.
2. Cook the Chicken:
Heat a large skillet or pan over medium-high heat. Add 2 tablespoons of olive oil.
Remove the chicken from the marinade, letting any excess drip off, and cook in the hot skillet until fully cooked and slightly browned. This usually takes about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. Cook the Vegetables:
In the same skillet, add a bit more olive oil if needed. Add the sliced onions and bell peppers. Cook until the vegetables are softened but still slightly crisp, about 5-7 minutes.
4. Combine and Serve:
Return the cooked chicken to the skillet with the vegetables, tossing everything together to combine and heat through.
Warm the flour tortillas in a dry skillet or microwave.
Serve the chicken and vegetable mixture on the warm tortillas.
Garnish with your favorite toppings such as sour cream, salsa, guacamole, shredded cheese, chopped cilantro, and a squeeze of lime.
Roll up the fajitas, and enjoy your delicious homemade chicken fajitas!
