1.Prepare the fruit base:
Preheat oven to 180°C (350°F).
Grease a baking dish. Spread sliced apples and blackberries evenly. Sprinkle 1–2 tbsp sugar over the fruit.
2. Make the pudding batter:
In a bowl, cream butter and sugar until light & fluffy.
Beat in eggs one at a time, then add vanilla extract.
Fold in flour and a pinch of salt until smooth.
3. Assemble:
Pour the batter over the fruit base, spreading evenly to cover.
4. Bake:
Bake for 35–40 minutes until golden brown on top and set in the middle.
5. Serve:
Best enjoyed warm with custard, cream, or a scoop of vanilla ice cream.
