Ingredients
(4 - 6 Servings)
2 tbsps Olive Oil,
8 ounces of Pasta,
1 cup cooked quinoa,
2 teaspoons minced garlic,
1 cup green beans trimmed and cut into 1 inch pieces,
1 cup cherry tomatoes quartered,
¼ cup toasted sliced almonds,
2 tablespoons basil sliced thinly,
1 tbsps grated cheese,
1/4 kg Chicken (slit into small pieces)
salt as per taste
Directions
Cook pasta according to package directions.
Drain and rinse. Meanwhile, spray a large pan with olive oil and heat to medium heat.
Add garlic and cook for 30 seconds.
Add the chicken pieces, Cook for 5 minutes, until crisp tender.
Combine pasta and quinoa.
Toss in the cherry tomatoes, beans and the cheese.
Top with almonds and basil and serve.
