Ingredients

8 eggs
2 large onions, finely chopped
2 tomatoes, finely chopped
2 green chilies, finely chopped
1 teaspoon garam masala (Indian spice blend)
Directions
Boil the eggs in some water.
With a big grater, grate the egg.
Heat a tablespoon of oil in a pan over medium heat.
Add the chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
Add the chopped tomatoes to the pan and cook until they soften and release their juices.
Now add the grated egg into the onion and tomato mixture.
Sprinkle garam masala and continue to cook until the eggs are fully cooked.
Take another pan, crack an egg to make a sunny side up omelette.
Now add the scrambled egg mixture on the omelette, sprinkle some red chilli powder.
Garnish with some fresh coriander, and enjoy!!
