Mixed lettuces such as bibb, watercress, and romaine
1 roasted chicken breast (or rotisserie chicken), cut into 1-inch pieces
½ cup cherry tomatoes, cut in half
3 slices cooked bacon (or turkey bacon), crumbled
2 tbsp blue cheese, crumbled
½ large avocado, diced
2 hard-boiled eggs, diced
1 tablespoon chives, finely chopped
sea salt and black pepper
for the dressing:
1 tbsp Dijon
1 tbsp red wine vinegar
½ tsp agave
3 tbsp olive oil
salt and pepper to taste
Directions
To make the dressing, whisk together Dijon mustard, red wine vinegar, and agave in a small bowl. Slowly pour in olive oil, whisking constantly, and season with salt and pepper to taste.
To make the salad, arrange lettuces on two plates or one platter. Top with chicken, cherry tomatoes, crumbled bacon, crumbled blue cheese, diced avocado, and diced hard-boiled eggs. Season avocado, tomatoes, and hard-boiled eggs with sea salt and freshly ground black pepper.
Drizzle over half the dressing and scatter with chopped chives.
